Last month in the kitchen, we brainstorm to bring some new summer item on the menu and we have a lot of ideas! Ghenet, our assistant cook tolls us the story about a meal she used to eat when she was in Greece. She calls it “Arakas” and describes it as a green pea stew, really easy to make and super tasty. So of course, we wanted to try it! She cooked it for us the next day and we got all charmed by the flavor in this dish. The taste of dill with the olive oil and feta is wonderful and the freshness of the peas will make anybody happy.

Arakas (Greek style peas)

Ingredients:

  • 1 onion, diced
  • ½ Cup olive oil
  • 3 carrots, diced
  • 4 roma tomatoes, chopped
  • 2 lb. of green peas, Frozen or fresh
  • 1/3 Cup of chopped dill or to taste
  • ½ C Feta cheese
  • Salt and pepper

Sautée the onions in 2 tablespoons of olive oil until they are golden. Add carrots and tomatoes and cook for 2 minutes. Add peas and the rest of the olive oil, mix well to ensure all the ingredients are cover in oil. Let it simmer on low heat for 20 to 30 minutes or until there is no more water in the pot.

Remove from heat, add the dill and seasoning with salt and pepper.

Let it cool down for 5 minutes and add the feta cheese.

Serve at room temperature with fresh bread.
